These Mango-Lime Coconut Energy Bites are a delightful departure from the usual, offering a tangy, sweet, and chewy experience that will transport your taste buds to a sunny beach. They are naturally sweetened and packed with wholesome goodness.
Materials
- 1 cup raw cashews
- 1 cup old-fashioned rolled oats
- 1/2 cup dried mango, chopped
- 1/2 cup shredded unsweetened coconut
- Zest of 1 large lime
- 2 tbsp fresh lime juice
- 3 tbsp coconut oil, melted
- 2 tbsp agave nectar or maple syrup
Preparation
- In a food processor, pulse the raw cashews and rolled oats until a coarse, flour-like consistency is achieved.
- Add the chopped dried mango, shredded coconut, lime zest, lime juice, melted coconut oil, and agave nectar to the food processor.
- Blend until the mixture clumps together and forms a sticky dough. You may need to scrape down the sides a few times.
- Transfer the mixture to a bowl and chill in the refrigerator for 30 minutes.
Cooking
- No oven or stovetop is needed for this recipe.
- Scoop the chilled dough and roll it into 1-inch balls.
- For an extra touch, roll the finished bites in more shredded coconut.
