Forget everything you thought you knew about party snacks. These bacon-wrapped pineapple bites are the perfect explosion of sweet, salty, and smoky flavors that will have your guests begging for the recipe. They're incredibly easy to make and disappear almost as fast as you can pull them from the oven.
Materials
- 1 can (20 ounces) pineapple chunks, drained well
- 12 slices of thick-cut bacon, halved
- 1/2 cup packed brown sugar
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 24 toothpicks
Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
- Pat the pineapple chunks completely dry with paper towels. This is crucial for getting the bacon crispy.
- In a small bowl, mix together the brown sugar, chili powder, and black pepper.
Cooking
- Wrap each pineapple chunk with a half-slice of bacon, securing it with a toothpick.
- Roll each bacon-wrapped pineapple chunk in the brown sugar mixture, ensuring it's evenly coated.
- Place the bites on the wire rack on your prepared baking sheet.
- Bake for 20-25 minutes, or until the bacon is crispy and caramelized. You may want to flip them halfway through for even cooking.
- Let them cool on the rack for a few minutes before serving, as the sugar will be very hot.
