No-Bake Peanut Butter Oat Energy Bites

When that mid-afternoon slump hits, fight back with these delicious and nutritious energy bites. They take just minutes to mix up, require zero baking, and are endlessly customizable. They’re the perfect solution for a healthy, homemade snack that tastes like a treat.
Materials
- 1 cup old-fashioned rolled oats
- 1/2 cup creamy peanut butter
- 1/3 cup honey or maple syrup
- 1/4 cup ground flax seeds
- 2 tbsp mini chocolate chips
- 1 tsp vanilla extract
- Pinch of salt
Preparation
- In a medium bowl, combine all the ingredients: rolled oats, peanut butter, honey, ground flax seeds, mini chocolate chips, vanilla extract, and a pinch of salt.
- Stir everything together until it's well combined and forms a sticky dough.
- Cover the bowl and chill the mixture in the refrigerator for at least 30 minutes. This makes it easier to roll.
Cooking
- Once chilled, roll the mixture into 1-inch balls using your hands.
- The bites are ready to eat immediately.
