Move over, cold dips. Winter calls for something warm, savory, and utterly irresistible. This Roasted Red Pepper and Feta Dip is just that. The sweetness of the roasted peppers melds beautifully with the salty, creamy feta, creating a complex flavor that is both comforting and sophisticated. It's incredibly easy to make and guaranteed to be the star of any snack spread.
Materials
- 1 jar (12 oz) roasted red peppers, drained
- 8 oz block of feta cheese, crumbled
- 2 cloves garlic, roughly chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional, for a little heat)
- Freshly ground black pepper to taste
- For serving: warm pita bread, crackers, or fresh vegetables
Preparation
- Let's get everything ready for its transformation! Start by preheating your oven to 400°F (200°C).
- Drain the roasted red peppers well and pat them dry with a paper towel. Getting rid of excess moisture will ensure your dip is thick and creamy, not watery.
- Now, it's time to build the flavor. In the bowl of a food processor, combine the drained roasted red peppers, crumbled feta cheese, chopped garlic, olive oil, lemon juice, dried oregano, and red pepper flakes if you're feeling a little spicy. The food processor will do all the hard work for you!
Cooking
- Pulse the mixture in the food processor until it's mostly smooth. We're not looking for a completely puréed texture; a little bit of texture from the feta is really nice. It should look vibrant and creamy.
- Taste the dip and season with a good amount of freshly ground black pepper. It probably won't need much salt, as the feta is already quite salty, but feel free to add a pinch if you think it needs it.
- Pour the dip into a small oven-safe dish, like a gratin dish or a small cast-iron skillet. Spread it out evenly.
- Bake for 10-15 minutes, or until the dip is heated through and bubbly around the edges. You'll know it's ready when your kitchen smells incredible and the dip is irresistibly warm.
