With a complex flavour profile that's part blueberry, part raspberry, and part something entirely its own, this unique Canadian berry is the perfect partner for intense dark chocolate. This chewy brownie recipe balances deep cocoa notes with the berry's vibrant tang.
Materials
- 6 oz 70% dark chocolate, chopped
- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup fresh or frozen Haskap berries (do not thaw if frozen)
Preparation
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides to lift them out later.
- In a microwave-safe bowl or a double boiler, melt the dark chocolate and butter together until smooth. Stir to combine.
- Remove from heat and whisk in the brown sugar until fully incorporated. The mixture will look grainy.
- Beat in the eggs one at a time until the batter is thick and glossy. Stir in the vanilla.
- Gently fold in the flour and salt until just a few streaks of flour remain.
- Carefully fold in the Haskap berries.
Cooking
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-28 minutes. The edges should be set and the top should have a shiny, crackled crust. A toothpick inserted in the center should come out with moist, chewy crumbs.
- Let the brownies cool completely in the pan on a wire rack. This is crucial for their chewy texture.
