Brownie Meets Crumble: A Match Made in Heaven
Why choose between a brownie and a fruit crumble when you can have both? This incredible brownie recipe features a dense, chocolatey foundation that's topped with a vibrant trio of Canadian berries—sweet blueberries, juicy strawberries, and chewy dried cranberries. A golden, buttery oat crumble topping adds the perfect crunchy contrast.
Materials
- For the Brownie: 1/2 cup butter, 1 cup sugar, 2 eggs, 1 tsp vanilla, 1/2 cup flour, 1/3 cup cocoa powder, 1/4 tsp salt
- For the Filling: 1/2 cup blueberries, 1/2 cup chopped strawberries, 1/4 cup dried cranberries, 1 tbsp cornstarch
- For the Crumble: 1/2 cup rolled oats, 1/2 cup flour, 1/2 cup brown sugar, 1/4 tsp cinnamon, 1/4 cup cold butter, cubed
Preparation
- Preheat oven to 350°F (175°C). Line an 8x8 inch pan with parchment paper.
- Prepare the brownie layer: Melt butter, then mix in sugar. Beat in eggs and vanilla. Whisk in flour, cocoa, and salt until just combined. Spread batter evenly in the prepared pan.
- Prepare the filling: In a small bowl, gently toss the blueberries, strawberries, dried cranberries, and cornstarch together. Spoon this mixture evenly over the brownie batter.
- Prepare the crumble: In another bowl, combine oats, flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Cooking
- Sprinkle the crumble topping evenly over the berry layer.
- Bake for 40-45 minutes, until the brownie base is cooked through (a toothpick inserted in a brownie-only section comes out with moist crumbs) and the crumble is golden brown.
- Let cool for at least 1 hour in the pan before slicing. This will help the layers set.
