Forget what you know about traditional brownies. We're taking the beloved bar into new territory with this white chocolate blondie recipe. The caramel and vanilla notes of the blondie batter provide the perfect canvas for the unique, almond-like sweetness of Saskatoon berries, creating a dessert that's both familiar and excitingly new.
Materials
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup packed brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup white chocolate chunks
- 1 cup fresh or frozen Saskatoon berries
Preparation
- Preheat your oven to 350°F (175°C). Grease and line a 9x9 inch baking pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, whisk the melted butter and brown sugar until well combined.
- Beat in the egg and vanilla extract until the mixture is light and creamy.
- Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Carefully fold in the white chocolate chunks and Saskatoon berries.
Cooking
- Pour the batter into the prepared pan and spread evenly with a spatula.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with moist crumbs attached.
- Let the blondies cool completely in the pan on a wire rack before cutting.
