Erupting Chocolate Volcano Lava Cakes

A Deliciously Explosive Experiment!
It's time for some kitchen science! These incredible Chocolate Volcanoes look like simple little cakes on the outside, but a surprise awaits inside. When you dig in with your spoon, a river of warm, molten chocolate lava flows out. It's a baking project that feels like a spectacular science experiment, and the results are absolutely delicious.
Materials
- 4 oz good-quality bittersweet chocolate, chopped
- 1/2 cup (1 stick) unsalted butter, plus more for ramekins
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- Pinch of salt
- Powdered sugar and fresh raspberries, for 'ash' and 'lava rocks'
Preparation
- First, an adult should preheat the oven to 400°F (200°C). Then, we'll prepare our volcano mounds. Generously butter four 6-ounce ramekins. This is a great job for kids - give them a pastry brush or let them use their clean fingers to coat the insides.
- Let's create the magma. In a microwave-safe bowl, combine the chopped chocolate and the butter. An adult should microwave this in 30-second intervals, stirring until completely melted and smooth. Let it cool slightly so we don't cook our eggs!
- In a separate, larger bowl, it's time to build the pressure! Use an electric mixer to beat the eggs, egg yolks, and sugar together on high speed until the mixture is thick and pale yellow, about 3-4 minutes.
- Gently fold the melted chocolate mixture into the egg mixture. Then, carefully fold in the flour and salt until just combined. You want to keep the batter light and airy!
Cooking
- Carefully divide the volcano batter among the prepared ramekins. Place them on a baking sheet to make them easier to handle.
- Now for the eruption! An adult should place the baking sheet in the preheated oven. Bake for 12-14 minutes. The magic is in the timing: the edges of the cake should be firm, but the center will still be soft and jiggly. That's the lava waiting to flow!
- With oven mitts, the adult should carefully remove the cakes from the oven. Let them rest for just one minute. This is a very important step!
- To de-mold, place a small dessert plate over a ramekin and, holding them together tightly, flip it over. Gently lift the ramekin off. The little volcano cake should stand proudly on the plate.
