Tired of the same old flavors? This granola is your ticket to a sun-drenched paradise. The combination of creamy toasted coconut and tangy lime zest is unexpectedly delightful, while pumpkin seeds provide a satisfying, nutty crunch. It's light, fragrant, and tastes like sunshine in a bowl.
Materials
- 2.5 cups rolled oats
- 1 cup raw pumpkin seeds
- 1 cup unsweetened large-flake coconut
- 1/2 cup sliced almonds
- Zest of 2 limes
- 1/4 teaspoon salt
- 1/2 cup melted coconut oil
- 1/2 cup agave nectar or light honey
Preparation
- Preheat your oven to 300°F (150°C). Prepare a large baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, pumpkin seeds, coconut flakes, sliced almonds, and salt. Toss to combine.
- In a separate, smaller bowl, whisk together the melted coconut oil, agave nectar, and the zest of both limes.
Cooking
- Pour the wet, lime-infused mixture over the dry oat mixture. Stir thoroughly until everything is evenly moistened.
- Spread the granola in a single layer on your prepared baking sheet.
- Bake for 25 minutes, stirring halfway through, until the coconut and oats are a light golden brown. Keep a close eye on it as coconut can toast quickly.
- Let the granola cool completely on the baking sheet to allow it to crisp up and form clusters.
- Break into pieces and store in an airtight container.
