Craving something rich and chocolatey but want to keep it healthy? These Chocolate Coconut Almond Energy Bites are your answer. Inspired by the beloved Almond Joy, they deliver deep cocoa flavor, chewy coconut, and nutty almond crunch in one perfect, bite-sized package.
Materials
- 1 cup old-fashioned rolled oats
- 1/2 cup creamy almond butter
- 1/2 cup shredded unsweetened coconut
- 1/3 cup pure maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/4 cup chopped almonds
- 1 tbsp chia seeds
- 1 tsp vanilla extract
Preparation
- In a medium bowl, combine all ingredients: oats, almond butter, shredded coconut, maple syrup, cocoa powder, chopped almonds, chia seeds, and vanilla.
- Mix well with a spatula until a thick, uniform dough forms. If the mixture is too dry, add a teaspoon of water or more maple syrup.
- Place the bowl in the refrigerator to chill for 30 minutes to firm up.
Cooking
- This is a no-bake recipe, so no cooking is involved.
- After chilling, use a small cookie scoop or your hands to form the mixture into 1-inch balls.
- Optionally, roll the finished balls in extra shredded coconut for a decorative coating.
