Crispy Baked Zucchini Fries

Your New Favorite Veggie Fry
Craving something crispy and savory? Look no further. These zucchini fries are baked, not fried, giving you all the crunch without the extra grease. They're a fantastic way to sneak more veggies into your diet and are perfect for dipping.
Materials
- 2 medium zucchinis
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and trim the ends of the zucchinis. Cut each zucchini into fry-shaped sticks, about 3-4 inches long.
- Set up a dredging station with three shallow dishes. Place the flour in the first, the beaten eggs in the second, and in the third, combine the panko breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
- Dredge each zucchini stick first in flour, then dip in the egg, and finally coat thoroughly with the panko-Parmesan mixture.
Cooking
- Arrange the coated zucchini sticks in a single layer on the prepared baking sheet, ensuring they don't touch.
- Bake for 15-20 minutes, flipping halfway through, until they are golden brown and crispy.
