Autumnal Apple Cinnamon Pumpkin Seed Granola

When the air turns crisp, there's nothing better than a breakfast that warms you from the inside out. This granola does just that. The natural sweetness of dried apples, combined with the classic duo of cinnamon and nutmeg, creates a comforting and wholesome blend that's both delicious and nourishing.
Materials
- 3 cups rolled oats
- 1 cup raw pumpkin seeds
- 1 cup finely chopped dried apples
- 1/2 cup chopped walnuts
- 1.5 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
Preparation
- Preheat oven to 300°F (150°C) and line a large baking sheet with parchment paper.
- In a large bowl, mix together the oats, pumpkin seeds, chopped walnuts, cinnamon, nutmeg, and salt.
- Stir in the chopped dried apples.
Cooking
- In a small bowl, whisk together the applesauce, maple syrup, and melted coconut oil until smooth.
- Pour the wet ingredients over the dry ingredients and stir until everything is well combined and moistened.
- Spread the granola mixture in a thin, even layer on the prepared baking sheet.
- Bake for 35 minutes, stirring every 10-15 minutes to ensure even browning. The granola should be dry and golden.
- Let the granola cool completely on the baking sheet to achieve maximum crispiness.
- Break into clusters and store in an airtight container.
