Matcha White Chocolate Pistachio Energy Bites

Elevate your snack time with these unique and flavorful energy bites. The subtle, earthy notes of ceremonial grade matcha powder are perfectly balanced by the creamy sweetness of white chocolate and the nutty crunch of pistachios. It's a sophisticated treat that offers a gentle energy boost without the jitters.
Materials
- 1 1/2 cups old-fashioned rolled oats
- 1/2 cup raw pistachios, shelled and chopped
- 1/3 cup vegan white chocolate chips
- 1/2 cup cashew butter
- 1/3 cup honey or agave nectar
- 1 1/2 tbsp ceremonial grade matcha powder
- 1 tsp vanilla extract
Preparation
- In a food processor, pulse 1/2 cup of the rolled oats until they form a fine flour. Transfer to a large mixing bowl.
- Add the remaining 1 cup of whole rolled oats, chopped pistachios, white chocolate chips, and matcha powder to the bowl. Stir to combine.
- In a separate small bowl, whisk together the cashew butter, honey (or agave), and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix thoroughly until a sticky, cohesive dough forms.
Cooking
- No cooking is required. Chill the mixture in the refrigerator for 30 minutes to make it less sticky and easier to handle.
- Once chilled, roll the dough into 1-inch balls.
- Place on a parchment-lined plate and let them set in the fridge.
