Spicy Dark Chocolate & Pumpkin Seed Granola

A Bold & Fiery Awakening
This is not your average breakfast. It's a granola with an edge, designed for those who appreciate a little complexity. The deep flavor of dark chocolate is perfectly complemented by the earthy pumpkin seeds, while a hint of cayenne adds a lingering warmth that makes each bite more interesting than the last.
Materials
- 3 cups rolled oats
- 1 cup raw pumpkin seeds
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (or to taste)
- 1/4 teaspoon salt
- 1/2 cup honey or agave nectar
- 1/3 cup melted coconut oil
- 1 cup dark chocolate chunks or chips
Preparation
- Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, pumpkin seeds, cocoa powder, cinnamon, cayenne pepper, and salt.
Cooking
- In a small bowl, whisk the honey/agave and melted coconut oil.
- Pour the liquid mixture over the dry ingredients and stir until evenly coated. The mixture will be thick.
- Spread the granola onto the prepared baking sheet in an even layer.
- Bake for 20-25 minutes, stirring once halfway through. Be careful not to burn it, as the dark color can be deceiving.
- Remove from the oven and let it cool completely on the pan.
- Once cool, sprinkle the dark chocolate chunks over the granola and break it into clusters. The residual heat will slightly melt the chocolate, helping it adhere.
