Materials
- 1 lb thick-cut bacon
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded Mexican cheese blend
- Toppings: shredded lettuce, diced tomatoes, sour cream, avocado
Preparation
- Preheat oven to 400°F (200°C). Turn a standard 12-cup muffin tin upside down.
- On a cutting board, create 6 bacon weaves, each about 4x4 inches, using 3-4 strips of bacon per weave.
- Carefully drape each bacon weave over an inverted muffin cup, pressing it down around the sides to form a cup shape.
- While the bacon is baking, cook the ground beef in a skillet over medium-high heat until browned. Drain the fat, then stir in the taco seasoning and water according to package directions. Simmer for 5 minutes.
Cooking
- Place the muffin tin on a larger baking sheet to catch grease. Bake the bacon weaves for 15-20 minutes, or until golden and crispy.
- Carefully remove the bacon cups from the muffin tin and place them upright on a baking sheet.
- Fill each bacon cup with the prepared taco meat and top generously with shredded cheese.
- Return to the oven for 3-5 minutes, or until the cheese is melted and bubbly.
