Wild Saskatoon Berry & Sage Bannock

This recipe elevates the classic bannock by infusing it with two iconic Northern ingredients. The sweet-tart pop of Saskatoon berries, reminiscent of blueberries and almonds, pairs beautifully with the herbaceous notes of wild sage, creating a complex and delicious fried bread.
Materials
- 3 cups all-purpose flour
- 2 tablespoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 1 teaspoon dried wild sage, crumbled
- 1/2 cup cold butter, cubed
- 1 cup fresh or frozen Saskatoon berries
- 1 cup buttermilk
- 3 tablespoons vegetable oil for frying
Preparation
- In a large bowl, whisk together the flour, baking powder, salt, sugar, and dried sage.
- Cut in the cold butter until the mixture is crumbly.
- Gently fold in the Saskatoon berries.
- Pour in the buttermilk and stir with a fork until just combined into a soft dough.
Cooking
- On a lightly floured surface, pat the dough into a 1-inch thick circle.
- Heat the vegetable oil in a large cast-iron skillet over medium heat.
- Carefully place the dough into the hot skillet.
- Cook for 5-6 minutes per side, until golden brown and a skewer inserted into the center comes out clean. The skillet might need to be covered to ensure it cooks through.
