Step into the heart of the Canadian boreal forest with this simple recipe for making bannock. The classic combination of wild blueberries and the sharp, aromatic bite of crushed juniper berries creates a flavour profile that is both wild and comforting. This is a true taste of the north.
Materials
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp brown sugar
- 1 tsp crushed dried juniper berries
- 1/4 cup cold lard or butter, cubed
- 1 cup wild blueberries (fresh or frozen)
- 2/3 cup water or milk
Preparation
- Preheat oven to 375°F (190°C). Lightly grease a cast-iron skillet or a baking sheet.
- In a large bowl, combine flour, baking powder, salt, brown sugar, and crushed juniper berries.
- Cut in the lard or butter until the mixture is crumbly.
- Gently stir in the wild blueberries.
- Add the water or milk all at once, mixing with a fork until a soft, shaggy dough forms.
Cooking
- Transfer the dough to a floured surface and knead gently 5-6 times until it holds together.
- Shape the dough into a round, slightly flattened loaf about 1.5 inches thick.
- Place the loaf in the prepared skillet or on the baking sheet. You can score the top with an 'X' if you like.
- Bake for 25-30 minutes, until the bannock is golden brown and sounds hollow when tapped on the bottom.
