What could be more Canadian than wild blueberries and maple syrup? This bannock recipe combines these two national treasures into one delicious, easy-to-make bread. Learning how to make bannock with these additions will give you a dessert or breakfast that's both rustic and refined.
Materials
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup pure maple syrup
- 1/2 cup cold butter, cubed
- 1 cup frozen wild blueberries
- 1 cup cold water or milk
Preparation
- In a large bowl, whisk together flour, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gently fold in the frozen wild blueberries (do not thaw).
- In a separate small bowl, mix the maple syrup with the cold water or milk. Gradually add the wet ingredients to the dry ingredients, stirring just until a shaggy dough forms.
Cooking
- Preheat oven to 400°F (200°C).
- Turn the dough onto a floured surface and gently shape it into a 1-inch thick circle. Be careful not to overwork the dough or the blueberries will burst and stain it.
- Place on a parchment-lined baking sheet.
- Bake for 20 minutes, or until golden brown and cooked through.
