Easy Blueberry Bliss Bannock

This traditional-inspired recipe is perfect for beginners, transforming basic pantry staples into a warm, slightly sweet, and wonderfully fruity treat, ideal for breakfast, a snack, or alongside a warm drink.
Materials
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup cold butter, cut into small cubes
- 3/4 cup milk (or water, or a dairy-free alternative)
- 1 cup fresh or frozen blueberries (do not thaw if frozen)
Preparation
- Preheat your oven to 375°F (190°C). Lightly grease a 9-inch round baking pan or an oven-safe cast iron skillet.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold butter cubes to the dry ingredients. Using your fingertips or a pastry blender, cut the butter into the flour mixture until it resembles coarse crumbs.
- Pour in the milk and stir with a wooden spoon or spatula until a shaggy dough forms. Be careful not to overmix.
- Gently fold in the blueberries until just distributed. If using frozen blueberries, incorporate them quickly to prevent the dough from turning purple.
Cooking
- Transfer the dough to the prepared baking pan or skillet. Press it down gently to form an even, flat round about 1-inch thick.
- Bake for 25-30 minutes, or until the bannock is golden brown on top and a wooden skewer inserted into the center comes out clean.
- If desired, for a richer golden crust, you can brush the top with a little melted butter halfway through baking.
- Remove from the oven and let it cool slightly in the pan before transferring to a wire rack.
