Materials
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup warm milk
- Vegetable oil for frying
- 1 cup white chocolate chips
- 1 cup fresh or frozen raspberries
- 2 tablespoons sugar
- 1 tablespoon lemon juice
- Fresh mint leaves for garnish
Preparation
- For the raspberry coulis: combine raspberries, sugar, and lemon juice in a small saucepan. Cook over medium heat for 5-7 minutes until berries break down. Strain through a fine-mesh sieve and set aside to cool.
- Prepare the fry bread dough: mix flour, baking powder, and salt. Add warm milk and stir to form a soft dough. Let it rest for 15 minutes.
- Divide the dough into 4 pieces, shaping each into a flat disc.
- Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Cooking
- Heat 2 inches of oil in a skillet to 350°F (175°C).
- Fry each dough disc for about 1-2 minutes on each side until puffed and golden.
- Remove from oil and drain on a wire rack.
