Maple-Glazed Toasted Walnut Bannock Scones

This recipe transforms humble bannock into a decadent treat worthy of a high-end bakery. The warmth of toasted walnuts and the quintessential Canadian sweetness of maple syrup create a tender, cake-like bannock that's perfect with a cup of coffee or tea.
Materials
- 2 1/2 cups all-purpose flour
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup toasted walnuts, roughly chopped
- 1/2 cup milk
- 1/4 cup pure maple syrup
- 1 egg
- For the glaze: 1/2 cup icing sugar, 2 tablespoons pure maple syrup
Preparation
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, brown sugar, baking powder, salt, and cinnamon.
- Cut in the butter until the mixture resembles coarse meal. Stir in the toasted walnuts.
- In a separate small bowl, whisk together the milk, 1/4 cup maple syrup, and the egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
Cooking
- Drop heaping spoonfuls of the dough (about 1/3 cup each) onto the baking sheet, about 2 inches apart.
- Bake for 20-22 minutes, until golden and a toothpick inserted into the center comes out clean.
- While the scones are cooling slightly, whisk together the icing sugar and 2 tablespoons of maple syrup to create a glaze.
- Drizzle the glaze over the warm bannock scones.
