Sharp Cheddar & Wild Onion Pan-Fried Bannock

This is the ultimate comfort food bannock. Imagine the sharp, salty tang of aged cheddar melting into the tender bread, punctuated by the fresh, zesty bite of wild onions. Pan-fried in butter, it develops an irresistible crispy crust, making it the perfect side for a hearty northern chili or soup.
Materials
- 3 cups all-purpose flour
- 2 tablespoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup cold butter, cubed
- 1 1/2 cups shredded sharp aged cheddar cheese
- 1/2 cup finely chopped wild onions or chives
- 1 cup milk
- 2 tablespoons butter for frying
Preparation
- In a large bowl, combine the flour, baking powder, salt, and cayenne pepper.
- Cut in the 1/2 cup of cold butter until the mixture is coarse and crumbly.
- Stir in 1 cup of the shredded cheddar and all the chopped wild onions.
- Gradually add the milk, stirring with a fork until a soft, sticky dough forms.
Cooking
- Melt 2 tablespoons of butter in a large cast-iron skillet over medium heat.
- Turn the dough into the hot skillet and use a spatula to press it into an even 1-inch thick circle.
- Sprinkle the remaining 1/2 cup of cheddar on top.
- Cook for 6-8 minutes, then carefully flip the bannock using a large plate to help.
- Cook for another 6-8 minutes on the other side, until golden brown, crispy, and cooked through.
