Easy Baked Saskatoon Berry Bannock

Bannock is a cherished and versatile bread with deep roots in Canadian history, particularly among Indigenous communities. While traditionally cooked over a fire, this simple baked version makes it accessible to every home cook. We're elevating this humble bread by incorporating vibrant Saskatoon berries, a true Canadian treasure, for a burst of fruity flavour in every bite. It's the perfect blend of tradition and modern comfort.
Materials
- 2 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup cold unsalted butter, cubed
- 1 cup fresh or frozen Saskatoon berries (or blueberries/mixed berries)
- ¾ cup milk (or buttermilk for extra tang)
- 1 tablespoon melted butter, for brushing (optional)
Preparation
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- Using a pastry blender or your fingertips, cut the cold, cubed butter into the dry ingredients until the mixture resembles coarse crumbs with a few pea-sized pieces of butter remaining.
- Gently fold in the Saskatoon berries, being careful not to crush them.
- Pour in the milk and stir with a fork just until a soft, shaggy dough forms. Do not overmix.
- Turn the dough out onto a lightly floured surface and gently knead it 3-4 times, just enough to bring it together. Pat the dough into a circle about 1-inch thick.
Cooking
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the round of dough onto the prepared baking sheet. You can cut it into 8 wedges with a sharp knife, or leave it whole.
- If desired, brush the top of the dough with the melted butter.
- Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let it cool on the baking sheet for a few minutes before transferring to a wire rack.
