It’s early July, and the blueberries are starting to ripen.

The promise of summer is hanging heavy on the branches this early July, where clusters of firm, pale-green blueberries are quietly undergoing their mid-season transformation. Right now, these young berries are soaking up the long hours of July sunshine and drawing nutrients from the soil. They are not quite ready for the harvest basket just yet, but their abundance is a reassuring sign that peak berry season is just around the corner.

Over the next few weeks, a remarkable shift will take place as the hard green fruit plumps up and softens. The crown-tipped skins will slowly blush with a reddish-purple hue before finally deepening into that iconic, dusty midnight blue. As this color changes, the starches within the fruit quickly convert into natural sugars, locking in the perfect balance of sweetness and tang.
