Elevate your weekend brunch with a French toast that's anything but ordinary. We're taking this classic dish to a new level by stuffing it with the timeless combination of peanut butter and banana. It's a sweet, satisfying, and utterly indulgent way to start your day.
Materials
- 4 thick slices of brioche or challah bread
- 1/4 cup creamy peanut butter
- 1 ripe banana, thinly sliced
- 2 large eggs
- 1/4 cup milk or cream
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Pinch of salt
- 2 tbsp butter for frying
- Toppings: maple syrup, powdered sugar, extra banana slices
Preparation
- Spread a generous layer of peanut butter on two slices of the brioche bread.
- Arrange the sliced banana in a single layer over the peanut butter.
- Top with the remaining two slices of bread to create two sandwiches.
- In a shallow dish, whisk together the eggs, milk, vanilla extract, cinnamon, and salt until well combined.
Cooking
- Carefully dip each sandwich into the egg mixture, allowing it to soak for about 20-30 seconds per side, ensuring the bread is saturated but not falling apart.
- Melt 1 tbsp of butter in a large non-stick skillet over medium heat.
- Place the soaked sandwiches in the skillet and cook for 3-4 minutes per side, until golden brown and cooked through. The peanut butter should be warm and melty.
- Repeat with the remaining butter and sandwich if needed.
