Materials
- 3 cups old-fashioned rolled oats (use certified gluten-free if needed)
- 1.5 cups raw pecan halves, roughly chopped
- 1/2 cup raw pepitas (pumpkin seeds)
- 1/3 cup coconut oil, melted
- 1/2 cup pure maple syrup
- 1 egg white, lightly whisked (this is the secret to clusters!)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon

Preparation
- Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

- In a separate medium bowl, whisk together the melted coconut oil, maple syrup, whisked egg white, vanilla extract, cinnamon, and sea salt until well combined.
- Pour the wet ingredients over the dry oat mixture. Use a spatula to stir thoroughly, ensuring every oat and nut is completely coated.
Cooking
- Spread the granola mixture onto the prepared baking sheet in an even, tightly packed layer. Use the back of the spatula to press it down firmly—this is crucial for forming clusters.
- Bake for 15 minutes. Remove from the oven and, using a spatula, gently flip the granola in large sections. Press it down again.
- Return to the oven and bake for another 15-20 minutes, or until it's a deep golden brown and fragrant. Be careful not to burn the pecans.
- Remove the baking sheet from the oven and let the granola cool completely on the pan without stirring it. It will crisp up as it cools.
- Once completely cool, break the granola into large, glorious clusters with your hands.
