It’s the perfect way to use leftover quinoa and create a quick, restaurant-worthy breakfast at home.
Materials
- 1 cup cooked quinoa, warmed
- 1 large egg
- 1/2 avocado, sliced
- 1 tsp olive oil
- 1 tsp everything bagel seasoning
- Salt and freshly ground black pepper to taste
- Optional: a handful of spinach, cherry tomatoes
Preparation
- If using, wilt the spinach in a dry pan for 1-2 minutes and place it in your serving bowl with the quinoa.
- Slice the avocado and prepare any other fresh toppings.
Cooking
- Heat the olive oil in a non-stick skillet over medium heat.
- Crack the egg into the skillet and cook to your desired doneness (sunny-side up or over-easy works best).
- Season the egg with salt and pepper while it cooks.
