Materials
- 2-3 large eggs
- 1 tablespoon unsalted butter
- 2 tablespoons shredded cheese (cheddar, Gruyere, or Monterey Jack work well)
- Pinch of salt
- Pinch of black pepper
- Optional: 1 tablespoon chopped fresh chives or parsley for garnish
Preparation
- Crack the eggs into a small bowl. Add a pinch of salt and pepper.
- Using a fork or a whisk, vigorously whisk the eggs until the yolks and whites are completely combined, and the mixture is slightly frothy. This usually takes about 30 seconds to 1 minute.
- If using, grate your cheese and set aside. Chop any herbs you plan to use for garnish.
Cooking
- Place an 8-inch non-stick skillet over medium-high heat. Add the butter and swirl it around until it melts and the foam subsides but before it starts to brown.
- Pour the whisked eggs into the hot skillet. Let the eggs sit undisturbed for about 10-15 seconds until the edges just begin to set.
- Using a rubber spatula, gently push the cooked egg from the edges towards the center, tilting the pan to allow the uncooked egg to flow underneath. Repeat this process around the pan until most of the egg is set but still moist and slightly runny on top.
- Sprinkle the shredded cheese evenly over one half of the omelette.
- Once the cheese starts to melt (about 15-20 seconds), gently fold the plain half of the omelette over the cheesy half using your spatula.
- Cook for another 10-15 seconds, then carefully slide the omelette onto a plate.
