An Irresistible Three-Ingredient Wonder
Often called 'devils on horseback,' these bacon-wrapped dates are a classic for a reason. The combination of flavors is simply divine. The natural sweetness of the dates intensifies as they bake, perfectly complementing the salty bacon and the creamy, tangy goat cheese filling. They are dangerously easy to eat and always the first thing to disappear from the platter.
Materials
- 16 large Medjool dates, pitted
- 4 ounces goat cheese, softened
- 8 slices of regular-cut bacon, halved crosswise
- Toothpicks
Preparation
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a wire rack for crispier bacon.
- Carefully slice a small slit into each pitted date to create a pocket.
- Fill each date with about 1/2 teaspoon of softened goat cheese.
- Gently press the date closed around the filling.
- Wrap one half-slice of bacon tightly around each stuffed date, ensuring the seam is on one side. Secure the bacon with a toothpick.
Cooking
- Place the bacon-wrapped dates, seam-side down, on the prepared baking sheet.
- Bake for 20-25 minutes, flipping them over halfway through, until the bacon is browned and crispy to your liking.
- Be sure to watch them closely towards the end of cooking to prevent the bacon from burning.
