Cook: 5 minutes (for glaze)
Servings: Makes about 20 skewers
Effortless Italian Elegance
Capture the classic flavors of a Caprese salad in a fun, portable format. These skewers are incredibly simple to assemble but look stunning on any platter. They are the ultimate no-cook appetizer for warm weather entertaining, picnics, or a light snack.
Materials
- 1 pint cherry tomatoes
- 1 container (8 oz) fresh mozzarella pearls (bocconcini)
- 1 large bunch of fresh basil leaves
- 1/2 cup balsamic vinegar
- 1 tbsp honey or maple syrup (optional)
- 2 tbsp extra virgin olive oil
- Salt and freshly ground black pepper to taste
- 20 small wooden skewers
Preparation
- If making your own glaze, pour the balsamic vinegar (and honey, if using) into a small saucepan. Bring to a simmer over medium heat and cook for 5-7 minutes, until the vinegar has thickened and coats the back of a spoon. Set aside to cool.
- Rinse and pat dry the cherry tomatoes and basil leaves.
- Drain the mozzarella pearls.
Cooking
- This recipe is primarily assembly. The only cooking is for the optional balsamic glaze.
