Beat the heat with an appetizer that's as refreshing as it is beautiful. These watermelon and feta skewers are incredibly easy to assemble but look stunning on any platter. The sweet, juicy watermelon perfectly contrasts with the salty, creamy feta, while a sprig of fresh mint adds a burst of cool, aromatic flavor. A final drizzle of balsamic glaze ties everything together with a touch of tangy sweetness.
Materials
- 1 small seedless watermelon, cut into 1-inch cubes
- 8 oz block of feta cheese, cut into 3/4-inch cubes
- 1/4 cup fresh mint leaves
- 2 tbsp balsamic glaze
- 20 small wooden skewers
Preparation
- Cube the watermelon and feta cheese to the specified sizes.
- Gently wash and pat dry the fresh mint leaves.
- On each skewer, thread one cube of watermelon, followed by a folded mint leaf, and then a cube of feta. Repeat with one more piece of watermelon if desired.
Cooking
- Arrange the completed skewers on a chilled serving platter.
- Just before serving, drizzle the balsamic glaze over the skewers.
