Surprise your guests with an appetizer they can sip! These Cucumber & Mint Raita Shooters are a creative twist on the classic Indian condiment. We blend creamy yogurt with refreshing cucumber, vibrant mint, and a hint of roasted cumin for a savory, complex flavor profile. Served chilled in shot glasses, it's a palate-cleansing and utterly delightful way to begin a dining experience.
Materials
- 2 cups plain yogurt (not Greek style)
- 1 large cucumber, peeled, seeded, and roughly chopped
- 1/2 cup packed fresh mint leaves
- 1 small green chili, deseeded (optional)
- 1/2 tsp roasted cumin powder
- 1/4 tsp salt, or to taste
- Pinch of black pepper
- Garnish: finely diced cucumber and small mint sprigs
Preparation
- In a blender, combine the plain yogurt, chopped cucumber, fresh mint leaves, green chili (if using), roasted cumin powder, salt, and black pepper.
- Blend on high until completely smooth and a pale green color.
- Taste and adjust seasoning if necessary. If the mixture is too thick, add a tablespoon or two of cold water to reach a drinkable consistency.
Cooking
- Pour the blended raita into a pitcher and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
