Materials
- 1 lb boneless, skinless chicken breasts, sliced into strips
- 2 bell peppers (different colors), sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 1 packet fajita seasoning
- 8 small flour or corn tortillas
- Toppings: sour cream, guacamole, salsa, shredded cheese, lime wedges
Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the sliced chicken, bell peppers, and onion with olive oil and fajita seasoning until everything is evenly coated.
- Spread the mixture in a single layer on a large, rimmed baking sheet.
Cooking
- Bake for 15-20 minutes, stirring halfway through, until the chicken is cooked through and the vegetables are tender-crisp and slightly charred.
- During the last 2-3 minutes of cooking, wrap your tortillas in foil and place them in the oven to warm up.
