Don't Knock It 'Til You've Fried It
Welcome to the wild side of burgers! If the thought of peanut butter and jelly on a bacon cheeseburger makes you pause, we urge you to take a leap of faith. This recipe balances the salty, smoky crunch of bacon and the rich, savory flavor of a beef patty with the creamy sweetness of peanut butter and a sharp, fruity kick from raspberry jelly. It's a symphony of textures and tastes that surprisingly work in perfect harmony, creating an unforgettable gourmet experience right in your own kitchen.
Materials
- 1.5 lbs ground beef (80/20 chuck is ideal)
- 8 slices of thick-cut bacon
- 4 slices of sharp cheddar or American cheese
- 4 brioche buns, split
- 1/2 cup creamy peanut butter
- 1/2 cup raspberry jelly or preserves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Optional toppings: sliced red onion, lettuce, pickled jalapeƱos
Preparation
- In a large skillet, cook the bacon over medium heat until crispy. Transfer to a paper towel-lined plate to drain, leaving the bacon grease in the skillet.
- In a large bowl, gently combine the ground beef, salt, black pepper, and garlic powder. Be careful not to overmix.
- Divide the meat mixture into four equal portions and gently shape them into patties, slightly larger than your buns.
- Spread a thin layer of butter on the cut sides of the brioche buns and toast them in a separate clean skillet or on the grill until golden brown. Set aside.
Cooking
- Heat the skillet with the reserved bacon grease over medium-high heat. If grilling, preheat your grill to a similar temperature.
- Carefully place the patties in the hot skillet or on the grill. Cook for 3-4 minutes per side for medium-rare, or until cooked to your desired doneness.
- During the last minute of cooking, place a slice of cheese on top of each patty to melt.
- Remove the patties from the heat and let them rest for a couple of minutes.
