Cheesy Chicken Quesadilla Pinwheels

Quesadillas are a classic for a reason, but why not give them a fun twist? By rolling them up before slicing, you create these adorable and easy-to-eat pinwheels. They're packed with juicy chicken and gooey cheese, making them an irresistible main course that feels like a treat.
Materials
- 4 large (10-inch) flour tortillas
- 2 cups cooked, shredded chicken
- 1 1/2 cups shredded Mexican cheese blend
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 2 tbsp butter or oil for the pan
- Dipping sauces: salsa, sour cream, guacamole
Preparation
- In a medium bowl, combine the shredded chicken, 1 cup of the shredded cheese, red onion, and cilantro. Mix well.
- Lay a tortilla flat and spread about 1/4 of the chicken mixture evenly over the surface, leaving a small border around the edge.
- Sprinkle a little extra cheese over the mixture.
- Roll the tortilla up tightly to form a log.
Cooking
- Heat butter or oil in a large skillet or pan over medium heat.
- Carefully place two tortilla rolls, seam-side down, in the pan.
- Cook for 2-3 minutes per side, turning carefully, until the tortilla is golden brown and crispy on all sides and the cheese inside is melted.
- Repeat with the remaining two rolls.
- Remove the rolls from the pan and let them rest for a minute on a cutting board.
