Velvet in a Spoon
Indulge in a guilt-free dessert that sacrifices nothing in terms of flavor or texture. This mousse uses the natural creaminess of ripe avocados to create a silken, rich base for deep, dark chocolate. It's a vegan, dairy-free treat that is both incredibly easy to make and impressively elegant.
Materials
- 2 large ripe avocados, halved and pitted
- 1/2 cup (60g) unsweetened cocoa powder
- 1/2 cup (120ml) maple syrup or agave nectar
- 1/4 cup (60ml) unsweetened almond milk or other non-dairy milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 ounces (56g) dark chocolate, melted (optional, for extra richness)
Preparation
- Scoop the flesh from the ripe avocados and place it into the bowl of a food processor or a high-speed blender.
- Add the cocoa powder, maple syrup, almond milk, vanilla extract, and salt to the food processor.
- If using, melt the dark chocolate in the microwave in 20-second bursts until smooth, then add it to the food processor as well.
Cooking
- Blend the ingredients on high speed for 1-2 minutes, scraping down the sides of the bowl as needed, until the mixture is completely smooth and creamy. There should be no visible avocado chunks.
- Taste the mousse and adjust sweetness if necessary.
- Divide the mousse evenly among four small dessert glasses or bowls.
- Chill in the refrigerator for at least 30 minutes to an hour to allow it to set and the flavors to meld.
