Gilded Citrus: Chocolate-Dipped Candied Orange Slices

Transform simple oranges into an exquisite confection that looks like stained glass and tastes divine. The process of candying mellows the bitterness of the orange pith, creating a chewy, sweet citrus slice that pairs perfectly with the intensity of dark chocolate. It's a simple, elegant treat for gifting or enjoying yourself.
Materials
- 2 large navel oranges, scrubbed well
- 2 cups (400g) granulated sugar
- 1 1/2 cups (360ml) water
- 6 ounces (170g) high-quality dark chocolate (60-70% cacao), chopped
- Flaky sea salt for sprinkling (optional)
Preparation
- Slice the oranges thinly into 1/4-inch rounds. Discard the end pieces.
- In a large pot, bring 4 cups of water to a boil. Add the orange slices and boil for 2 minutes. This helps to reduce their bitterness. Drain the slices and set aside.
Cooking
- In a wide, heavy-bottomed pan, combine the 2 cups of sugar and 1 1/2 cups of water. Bring to a simmer over medium heat, stirring until the sugar is completely dissolved.
- Carefully arrange the blanched orange slices in a single layer in the sugar syrup. Reduce the heat to low and let them simmer gently for 60-75 minutes, turning them occasionally, until the white pith is translucent.
- Using tongs, carefully remove the slices from the syrup and place them on a wire rack to cool and dry completely. This can take several hours or overnight.
- Once the orange slices are dry to the touch, melt the chopped dark chocolate in a microwave-safe bowl in 30-second intervals or over a double boiler.
- Dip each candied orange slice halfway into the melted chocolate. Place the dipped slices back on the wire rack or on a parchment-lined baking sheet.
- If desired, sprinkle a tiny amount of flaky sea salt over the wet chocolate. Let them sit until the chocolate is completely set.
