The Ultimate Guilt-Free Indulgence
Craving something sweet but want to keep it healthy? These no-bake energy bites are the answer. They're naturally sweetened with Medjool dates and packed with fiber from oats and healthy fats from pumpkin seeds. With a rich chocolatey flavor, they taste like a decadent dessert but function as the perfect pre-workout fuel, afternoon snack, or healthy treat.
Materials
- 1 cup pitted Medjool dates
- 1 1/2 cups old-fashioned rolled oats
- 1/2 cup raw pumpkin seeds (pepitas), plus more for rolling
- 1/3 cup unsweetened cocoa powder
- 2 tablespoons chia seeds
- 1/4 teaspoon sea salt
- 1/4 cup water, as needed
- 1/3 cup mini dark chocolate chips (optional)
Preparation
- If your dates are not soft, soak them in hot water for 10 minutes, then drain thoroughly.
- In the bowl of a food processor, combine the dates, rolled oats, 1/2 cup pumpkin seeds, cocoa powder, chia seeds, and sea salt.
- Pulse the mixture until it breaks down and starts to clump together. The texture should be crumbly but stick together when pressed between your fingers.
- If the mixture is too dry, add water, one tablespoon at a time, and pulse until the desired consistency is reached.
- Transfer the mixture to a bowl and stir in the mini dark chocolate chips, if using.
Cooking

- Scoop about one tablespoon of the mixture and roll it between your hands to form a ball.
- If desired, roll the finished balls in extra crushed pumpkin seeds for a crunchy coating.
- Place the finished bites on a plate or baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
