Fudgy Brownies with a Pumpkin Seed Butter Swirl

Prepare to fall in love with your new favorite brownie. This recipe combines the deep, familiar comfort of a fudgy chocolate brownie with the unique, earthy flavor of pumpkin seed butter. Materials
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- For the swirl: 1/2 cup pumpkin seed butter, 2 tablespoons powdered sugar, 1 tablespoon neutral oil (or milk)
Preparation
- Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan, or line with parchment paper leaving an overhang on two sides to lift the brownies out later.
- In a large bowl, whisk together the melted butter and granulated sugar. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
- In a separate small bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix. Pour the batter into the prepared pan and spread evenly.
- In another small bowl, stir together the pumpkin seed butter, powdered sugar, and oil until smooth and creamy.
Cooking
- Drop spoonfuls of the pumpkin seed butter mixture over the top of the brownie batter.
- Use a knife or a skewer to gently swirl the pumpkin seed butter into the brownie batter, creating a marbled pattern.
- Bake for 25-30 minutes, or until a wooden toothpick inserted into the center comes out with moist crumbs attached, but not wet batter.
- Let the brownies cool completely in the pan on a wire rack before lifting them out and cutting into squares.
