Savory Cheddar, Chive & Bacon Muffins

Who says muffins have to be sweet? These savory muffins are a game-changer. Tender, cheesy, and loaded with flavor, they're like a complete breakfast in one convenient package. They're perfect for those busy mornings or as a savory accompaniment to soup or salad.
Materials
- 2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 1/2 cups shredded sharp cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/4 cup chopped fresh chives
Preparation
- Preheat the oven to 400°F (200°C) and grease or line a 12-cup muffin tin.
- Cook the bacon until crisp, then drain on paper towels and crumble once cooled.
- In a large bowl, combine the flour, sugar, baking powder, salt, and pepper.
- In a separate bowl, whisk together the milk, melted butter, and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in 1 cup of the shredded cheddar, the crumbled bacon, and the chopped chives.
Cooking
- Divide the batter evenly among the muffin cups.
- Sprinkle the remaining 1/2 cup of cheddar cheese over the tops of the muffins.
- Bake for 18-20 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack.
