Materials
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon cayenne pepper (or to taste, optional)
- 1/2 teaspoon salt
- 1 large egg
- 1 cup milk (whole or 2%)
- 1/2 cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- 1 1/2 cups mixed northern Canadian berries (e.g., Saskatoon berries, wild cranberries, or blueberries), fresh or frozen (do not thaw)
Preparation
- Preheat oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or grease generously.
- In a large bowl, whisk together the dry ingredients: flour, granulated sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, cayenne pepper (if using), and salt.
- In a separate medium bowl, whisk together the wet ingredients: egg, milk, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients. Stir with a spoon or spatula just until combined and no dry streaks remain. Be careful not to overmix; a few lumps are fine.
- Gently fold in the mixed northern Canadian berries. If using frozen berries, fold them in directly from the freezer.
Cooking
- Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full.
- Bake for 25-30 minutes, or until the muffins are golden brown and a wooden skewer inserted into the center of a muffin comes out clean.
- Remove the muffin pan from the oven and let cool in the pan for 5 minutes.
- Transfer the muffins to a wire rack to cool completely.
