Cozy Spiced Apple & Oat Muffins

Autumn in a Muffin Cup
Embrace the flavors of the season with these spiced apple and oat muffins. Each bite is filled with the comforting taste of cinnamon, nutmeg, and ginger, complemented by sweet apple pieces and the wholesome texture of oats. They make your kitchen smell absolutely divine as they bake.
Materials
- 1 1/4 cups all-purpose flour
- 3/4 cup rolled oats (old-fashioned, not instant)
- 1/2 cup packed brown sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 large egg
- 3/4 cup milk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 large apple (like Honeycrisp or Granny Smith), peeled, cored, and diced small
Preparation
- Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with liners.
- In a large bowl, whisk together the flour, rolled oats, brown sugar, baking powder, cinnamon, nutmeg, ginger, and salt.
- In a separate medium bowl, whisk the egg, milk, oil, and vanilla extract until combined.
- Pour the wet ingredients into the bowl of dry ingredients and stir with a spatula until just combined. The batter will be thick.
- Gently fold in the diced apple.
Cooking
- Divide the batter evenly among the prepared muffin cups.
- For an optional topping, you can sprinkle a little extra rolled oats and a pinch of brown sugar on top of each muffin before baking.
- Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Let cool in the muffin tin for 5 minutes before transferring to a wire rack.
