When the 3 PM slump hits, resist the urge to reach for junk food. These No-Bake Peanut Butter Energy Bites are your secret weapon. Combining wholesome oats, protein-rich peanut butter, and a touch of sweetness, they provide a lasting energy boost that's both delicious and guilt-free.
Materials
- 1 cup old-fashioned rolled oats
- 1/2 cup creamy or crunchy peanut butter
- 1/3 cup honey or maple syrup
- 1/2 cup ground flaxseed
- 1/2 cup mini chocolate chips or raisins
Preparation
- In a medium bowl, combine all the ingredients: rolled oats, peanut butter, honey, ground flaxseed, and chocolate chips.
- Stir with a spatula until everything is thoroughly mixed and a sticky 'dough' forms.
- If the mixture seems too dry, add another tablespoon of peanut butter. If it's too wet, add a tablespoon of oats.
Cooking
- Chill the mixture in the refrigerator for 30 minutes. This will make it less sticky and easier to roll.
- Once chilled, use a small cookie scoop or your hands to roll the mixture into 1-inch balls.
- The bites are ready to eat immediately.
