Rhubarb’s Spring Ascent

Almost Ready for the Picking!

As the days lengthen and spring truly takes hold, one of our favorite garden delights, rhubarb, is making its impressive ascent. Those vibrant green, crinkly leaves are unfurling with gusto, reaching skyward in a beautiful display of growth. It’s this time of year that we eagerly watch as the stalks thicken and the plant gains height, knowing that soon, very soon, we’ll be able to harvest its tangy goodness.

The image above perfectly captures the lushness of rhubarb in its prime growing season. While the stalks might not yet be at their peak for picking, the robust foliage indicates a healthy and thriving plant, soaking up the sun and energy it needs to produce those coveted ruby-red (or sometimes green) stems. There’s a subtle anticipation in the air as we admire its progress, imagining the delicious treats that await us once it’s ready.

Soon enough, the time will come to carefully select those mature stalks, leaving the younger ones to continue growing. From classic rhubarb crisps and pies to refreshing compotes, sauces, and even savory dishes, the versatility of rhubarb is truly remarkable. The slightly tart flavor, balanced with a touch of sweetness, makes it a star ingredient in so many spring and summer recipes. We’re certainly looking forward to indulging in all the amazing things we can bake and make with our homegrown bounty!
