Molten Chocolate Peanut Butter Lava Cakes

Prepare to be captivated by the irresistible combination of rich dark chocolate and creamy, molten peanut butter. These individual lava cakes are surprisingly simple to make and promise a show-stopping dessert experience every time. Perfect for a special occasion or when you just need a serious chocolate fix.
Materials
- 4 oz bittersweet chocolate, chopped
- 1/2 cup unsalted butter
- 1/2 cup creamy peanut butter
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- Pinch of salt
- Powdered sugar for dusting
Preparation
- Preheat your oven to 400°F (200°C). Generously butter and flour four 6-ounce ramekins.
- In a small bowl, mix the creamy peanut butter until smooth. Freeze four 1-tablespoon-sized balls of peanut butter on a small parchment-lined plate for about 15 minutes.
- In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and fluffy.
- Gently fold the flour and salt into the egg mixture until just combined. Do not overmix.
Cooking
- In a double boiler or microwave-safe bowl, melt the bittersweet chocolate and butter together until smooth.
- Remove from heat and let the chocolate mixture cool slightly for a few minutes.
- Gently whisk the cooled chocolate mixture into the egg mixture until fully incorporated.
- Divide half of the batter evenly among the prepared ramekins. Place one frozen peanut butter ball in the center of each.
- Top with the remaining batter, covering the peanut butter completely.
- Bake for 12-15 minutes, or until the edges are set but the center is still soft.
- Let the cakes cool in the ramekins for 1-2 minutes before carefully inverting them onto serving plates.
