Festive White Chocolate Cherry Almond Bark

Sometimes the most beautiful treats are the easiest to make. This white chocolate bark is a testament to that. The creamy sweetness of the white chocolate provides the perfect canvas for the vibrant, tart flavor of dried cherries and the nutty crunch of toasted almonds. It's a visually stunning confection that requires minimal effort.
Materials
- 12 oz high-quality white chocolate, chopped
- 1 cup dried tart cherries
- 1/2 cup slivered almonds, toasted
- Pinch of sea salt (optional)
Preparation
- Line a baking sheet with parchment paper.
- Toast the slivered almonds in a dry skillet over medium heat for 3-5 minutes, stirring frequently, until they are fragrant and lightly golden. Set aside to cool.
- Roughly chop the dried cherries if they are large.
Cooking
- Melt the white chocolate in a double boiler or in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth. Be careful not to overheat white chocolate as it can seize.
- Once melted and smooth, stir in most of the toasted almonds and dried cherries, reserving some for the top.
- Pour the white chocolate mixture onto the prepared baking sheet and spread it into an even layer, about 1/4 inch thick.
- Sprinkle the remaining almonds, cherries, and a pinch of sea salt (if using) over the top.
- Refrigerate for about 1 hour, or until the bark is completely firm.
