Materials
- 1 head romaine lettuce, or mixed greens
- 1 cup cherry tomatoes, halved
- 1 large cucumber, thinly sliced or diced
- 1 carrot, peeled and shaved into ribbons
- 1/2 red onion, thinly sliced
- 1/2 bell pepper (any color), cored and thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 small clove garlic, minced
- 1/2 teaspoon dried oregano (or 1 tsp fresh, chopped)
- Salt to taste
- Freshly ground black pepper to taste
Preparation
- Carefully wash and thoroughly dry all your fresh produce. This is key for a crisp salad!
- Tear the romaine lettuce (or mixed greens) into bite-sized pieces and place them in a large salad bowl.
- Halve the cherry tomatoes. Slice the cucumber, bell pepper, and red onion. Peel and shave the carrot into delicate ribbons using a vegetable peeler. Add all these prepared vegetables to the salad bowl with the greens.
- Chop the fresh parsley and set aside.
- For the Zesty Lemon-Herb Vinaigrette: In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and pepper until well combined and emulsified.
